At my old job and current job, we had frequent potluck lunches. One girl at my old job gave me this recipe. It's a unique recipe that most people I know have never seen so I make it and take it to any picnic, potluck, or reunion where there are a lot of people to feed. It is always a huge hit and people always ask me for the recipe.
You'll need a large plastic serving bowl, preferably clear.
It's hard to see here but the Cornbread Salad is in the blue see-through bowl. I made it for our wedding. Yes, I made some of the food for our own wedding.
Ingredients:
1 box cornbread mix
1 can green chilies - drained
onion 1/4 cup minced and 1 cup diced
8 oz sour cream
1 cup mayo
1 package ranch dip mix
10-12 slices of crisp bacon - crumbled
2 green peppers - chopped
2 tomatoes - diced
1 cup scallions
8 oz shredded cheddar cheese
2 cans pinto beans - drained
3 cans corn - drained
Directions:
Bake the cornbread mix using the directions on the box ADDING the 1/4 cup onion and can of green chilies.
Reserve 1-2 muffin size pieces of cornbread for the top.
Mix together the sour cream, mayo and ranch dip packet.
Layer:
1/2 the cornbread
1/2 the corn
1/2 the pinto beans
1/2 of the ranch dip mix
1/2 the bacon
1/2 the green peppers
1/2 the tomatoes
1/2 the onions
1/2 the cheese
Repeat with the remaining half of ingredients. Top with the remaining cornbread.
